Whole Mushroom Standard
How NC Mushrooms Grows and Handles Whole Mushrooms
NC Mushrooms is a mushroom farm based in North Carolina. The first and most important thing we do is grow fresh mushrooms. Many of our harvests are sold fresh through local outlets including farmers markets and direct sales. Everything else we offer begins as the same fresh mushrooms grown on our farm.
The Whole Mushroom Standard describes how we handle mushrooms after harvest. Some mushrooms are sold fresh. Others are gently dried and milled into a single whole mushroom powder made entirely from complete fruiting bodies. That powder is what fills our capsules. No grain based material no partial growth and no alternate inputs are used.
We work exclusively with mushrooms that are grown to full maturity on hardwood based growing media. What you see at the farmers market and what goes into our shelf stable products comes from the same crops harvested from our grow rooms and handled with care from the start.
Whole Mushrooms First, Capsules After Harvest
At NC Mushrooms everything begins with fresh mushrooms grown on our farm. Many harvests are sold fresh through local outlets and farmers markets. When mushrooms are not sold fresh they are handled in a way that preserves the whole mushroom rather than transforming it into something else.
Capsules are one of those post harvest options. They are made from the same hardwood grown fruiting bodies we harvest from our grow rooms. We do not use grain based mycelium or filler material. Only complete mature mushrooms move forward.
After harvest mushrooms intended for shelf stable use are gently dried and milled into a fine consistent powder made entirely from whole mushroom fruiting bodies. That powder is used to fill capsules with no added starches or bulk ingredients.
Each capsule contains whole mushroom powder from NC Mushrooms and a vegetarian capsule shell. Nothing is removed and nothing is added. For those who want a convenient way to include whole mushrooms in their routine when fresh mushrooms are not available this is the format we recommend.
From Harvest to Whole Mushroom Powder
NC Mushrooms grows fresh mushrooms first. When mushrooms are not sold fresh they are handled after harvest in a way that preserves the whole mushroom rather than breaking it down into isolated parts.
Fruiting bodies are grown on hardwood based growing media harvested at full maturity and gently dried to fully stabilize the tissue. Once dry the mushrooms are milled into a uniform whole mushroom powder made entirely from the fruiting bodies we grow.
This powder is not treated or altered beyond drying and milling. Nothing is removed and nothing is concentrated. It remains whole mushroom tissue in a shelf-stable form that reflects how the mushroom grew rather than how it was processed.
Keeping the powder whole is intentional. It allows the full structure of the mushroom to remain intact and keeps the focus on growing quality mushrooms rather than manipulating them after harvest.
Why We Keep Our Mushrooms Whole
At NC Mushrooms we focus on growing quality mushrooms rather than breaking them down after harvest. Once mushrooms are dried and milled into whole mushroom powder we stop there.
Whole mushroom powder preserves the complete structure of the fruiting body as it grew. Nothing is isolated removed or concentrated. The character of the mushroom comes from how it was cultivated harvested and handled rather than from chemical separation or processing.
This approach keeps our products closely tied to the farm. What we grow fresh is what we offer in shelf-stable form when fresh mushrooms are not available. It is a food-first standard built around agriculture rather than extraction.
For customers who want mushrooms in their most complete and least manipulated form this is the approach we stand behind.
Each Species Grown on Its Own Terms
Not every mushroom grows the same way, and we do not treat them as if they do. Lion’s mane, reishi, turkey tail, and other species each have their own growth habits, timing, and structural characteristics.
At NC Mushrooms these differences are addressed during cultivation rather than after harvest. Growing conditions, humidity, fresh air, and harvest timing are adjusted to the needs of each species so that mushrooms are allowed to mature fully and develop naturally.
By focusing on species specific growing practices we let each mushroom express its character in the form it was meant to take. What we harvest is whole fruiting body tissue grown to completion rather than material that needs to be altered or concentrated later.
This approach keeps our standards simple and consistent. One farm. One whole mushroom standard. Many species grown with intention.
What This Means for What You Receive
Most of the work that defines our mushrooms happens long before they ever reach a package. It starts with how they are grown, the materials they grow on, and the point at which they are harvested.
When mushrooms from NC Mushrooms are offered in shelf stable form they are made from whole fruiting bodies grown on our farm and handled carefully after harvest. Mushrooms that are not sold fresh are gently dried to stabilize the tissue and milled into a fine whole mushroom powder. Nothing is diluted and nothing is added.
What you receive reflects the density and integrity of the mushrooms themselves rather than any form of processing or concentration. The character of the mushroom comes from how it was grown and matured not from how it was altered afterward.
Whether purchased fresh or in shelf stable form the starting point is always the same. Whole mushrooms grown on our farm and handled with care from harvest forward.
Whole Mushroom Standard – FAQ
What does the Whole Mushroom Standard mean at NC Mushrooms?
The Whole Mushroom Standard is how we decide what is acceptable to grow and offer from our farm. It means we work only with complete mushroom fruiting bodies that are grown to full maturity. We do not use partial growth, grain-based mycelium, or material that never finished its life cycle as a mushroom.
Fresh mushrooms come first. When mushrooms are not sold fresh, they are handled after harvest in a way that keeps the whole mushroom intact rather than breaking it down or concentrating parts of it.
Are capsules made from the same mushrooms you sell fresh?
Yes. The mushrooms used for capsules come from the same harvests we grow and sell fresh. There is no separate crop or lower-grade material set aside for shelf-stable products.
When mushrooms are not sold fresh, they are gently dried after harvest and prepared into whole mushroom powder. The starting point is always the same mushrooms grown on our farm.
Why do you offer whole mushroom capsules instead of extracts?
We offer whole mushroom capsules because they stay closest to the way mushrooms exist as food. Drying and milling preserves the complete structure of the fruiting body without isolating or concentrating specific components.
This approach keeps the focus on growing quality mushrooms rather than altering them after harvest. Capsules are simply a convenient way to use whole mushrooms when fresh mushrooms are not available.
What part of the mushroom do you use in your products?
We use only whole fruiting bodies. These are the caps and stems that grow above the substrate and are traditionally recognized as the mushroom itself.
We do not use grain-based mycelium, colonized grain, or filler material. Everything we offer comes from mushrooms that were grown to full maturity and harvested from our grow rooms.
Why do you stop at whole mushrooms instead of extracting them?
Stopping at whole mushrooms is a deliberate choice. We believe the quality of a mushroom should come from how it is grown, harvested, and handled rather than from processing steps applied afterward.
By keeping the mushroom intact, we maintain a direct connection between the farm and what the customer receives. This approach supports our identity as a farm first, not a processing operation.
What happens to mushrooms that are not sold fresh?
When mushrooms are not sold fresh, they are handled after harvest to make them shelf stable. This involves gentle drying to fully stabilize the tissue, followed by milling into whole mushroom powder.
Nothing is added and nothing is removed. The result reflects the same mushrooms we grow and sell fresh, simply preserved so they can be used later without refrigeration.
